Tourism is a major part of the Spanish economy, so you will see lots of souvenir shops. I'm sure you'll be given time to explore some of them. All the places you listed will have them.
I looked at your profile and see you like sports and music. Here are a few ideas:
1.
Jersey or banner (looks like a long scarf) of a Spanish soccer team. For example Real Madrid, Bilbao Atletico, Bar�a, etc....Lightweight and unbreakable. Available everywhere.
2.
Spanish music CDs, especially ones you don't see back home. Available everywhere also.
It's great that you are making plans so far in advance.

Be sure to put this same enthusiasm into learning about all the great places you are going to visit!
Go to the library and check out a book on Spanish art. Read about El Greco, Picasso, Velazquez, and Goya, and see their paintings. You will surely be seeing their works of art in-person. Read about Franco and the Spanish Civil War, because you will be going to the Valley of the Fallen, where he is buried. Read about the Romans' history in Spain, because you will be seeing their magnificent aquaduct in Segovia. Learn something about Spanish cuisine, so you know what foods you will be enjoying!
OK, this might not seem so exciting, but you will NEVER regret the effort you put into it! And, you will make quite an impression on the Spaniards, because few tourists are willing to make such an effort to learn about their country.
