Oh, Peg, do I envy you! Chances are, you can get anything you want right in Madrid, but it might be more meaningful, say, if you were to buy damascene jewelry in Toledo after watching them make it(if that's part of your trip) As for the wine, sherry and vinegar, these have a high weight to space ratio! Not to mention the customs limitations(theoretically 1 litre only! of wine OR sherry, but I've carried as much as six back with me) I would say research what's available at home, then try some wines in Spain that aren't available and bring some home. If you can visit the winery it's from, so much the better.
Here is a plug for a stateside biz where you can get a lot of Spanish products at quite reasonable prices:
www.tienda.com. You might also check them out before giving space to a lot of souvenirs----unless, of course, you really want to tote pottery around. Depends a lot on your mode of transportation, who's handling the luggage, etc. I bought some gorgeous porcelain coffee cups and saucers in Galicia and saw luggage handlers do their worst; only one nearly invisible chip.
As for the jewelry, the fine cultured pearls of Majorica are worth what you pay(unless you are filthy rich and can afford totally "natural" pearls!)
Don't know much about lace, sorry to say. A lot of "artesanas"(handicrafts) are very much a matter of personal taste: pottery, tiles, metalwork, etc. One thing you might want to buy that is cheap and useful is a clay "cazuela" if you want to cook "Spanish" style. Bulky, but high on the authenticity scale.
The good old Corte Ingls has a surprisingly wide array of "good stuff"---also a lot of junk, so be selective. If you can't get to places where the stuff is actually made, it's a good compromise, I think. If you are on a tour, chances are the guides or company has made a deal with outlet-type places where you can get "everything under the sun"
Happy shopping! and Buen viaje!
