You can also tell them that you're vegetarian:
Soy vegetariana.
That way they know right off not to offer you meat plates. Be careful though. I don't consider Spain to be the most vegetarian friendly country in the world. You'll find them offering your fish and seafood plates even if you say you're vegetarian as many vegetarians here aren't strict vegetarians and do eat fish.
I suppose that may have to do with Madrid in particular being the second biggest seafood and fish consuming city in the world behind Tokyo.

Just a small tip to make your visit more comfortable. Spain is famous for its seafood and shellfish in particular. Many of their most delicious dishes come from the sea.
What you may want to do is to look into a few Spanish cookbooks, and select a few savory dishes. This way you will know what goes into making the desired a dish. So if you are in mood say to eat codfish, you may want to order Bacalao a la Vizcaina. Just a suggestion ...
By the way Queen Sofia of Spain is a vegetarian, and there are a few vegetarian restaurants in Madrid that have been discussed on this website. You can use the search function above. :cheers:
