Okay, I know this is not the most important topic in the world, but I cannot for the life of me remember the name of this wonderful cheese that I got at the Makro outside of Madrid. :l: It is soft and has a consistency almost like jello, and kids apparently like it, it tastes like fresh mozzarella. It comes in plastic tubs. Can anyone help me out here? I am trying to get the grocery store to import some, since they already get soft manchego. Yum! Anyone? Anyone?

I am sure that Chica is right and that you are thinking of "Queso de Burgos".
The CHEESY PAGE at La Espa�ola Meats does not have "Queso Fresco de Burgos" on it nor do they sell it on the TIENDA CHEESE PAGE but I found this page with a a good descriptionof the stuff HERE.

I must be the lucky lady. I've just been eating Manchego cheese.(and jamon serrano, chorico) Mum gets it from the Spanish Deli that she works in here in LONDON, ENGLAND. and many other Spanish favourites :l:

Sad to say - no for exactly that reason - they import the Spanish cheeses (no phony stuff) and as a result - omly ones that can travel plus have a shelf life. For asparagus lovers - Trader Joe's has great white asparagus in glass jars - about $2.50 per jar - and yeah, you can eat it all at one sitting!

A photo? You produced a photo of the cheese? I am impressed! I should not be all that surprised, though, given the Plaza Mayor waiter dating game thingie that you did. That looks like it. It must be the queso of which I speak! Thanks everyone for the cheese links. I'm all hungry now! If I can't get them to import queso fresco to my store, I'll just have to bring some home with me in my equipaje de mano en Noviembre! Did I tell you about my cheese incident in August? I bought two wheels of Manchego--one very ripe, and one semi-ripe. Put 'em in my suitcase. (It was early, I had too much Oruja the night before, you know how it is), and they lost my suitcase. For four days. It was hot out. When I got it back, the soft wheel had apparently exploded inside my suitcase, covering everyting inside. I am still working on a few faviorite blouses to get the cheese odor out. :lo: Bleh. Leccion: Put the cheese in your carry on. End of leccion.
I'm back, been camping in Cornwall. Sorry, but do not do Queso de Burgos here at mums deli. Because it is a soft cheese and havs a very short sell by date, so would not keep for long.

Manchego is my favourite and is EVERYWHERE in Spain. So you don't need to go very far in order to get your 'fix'. But my almost favourite is the cheese from the hills of Cadiz province : GRAZALEMA It has a rather unique texture and I can eat it on dry bread, by itself or better still on some good old English Cream Crackers. But more importantly, with a mellow glass of vino tinto. In fact, that's what I may have for lunch !!

Well, I am going to apologise in advance. Queso de Burgos? Don�t like it at all!!!! Give me queso fresco everytime. Bought from the goat farm right outside my front door!!! What I want to know is how do you translate/explain what cottage cheese is, in Spanish!!! Well, in Canarian if you can!!! I just cannot buy it here, and I have even taken some over to the goat farm to show them, as I believe it is part of the process of making queso fresco. My goat farmer neighbours hated the look/taste etc of it, said they had never seen it before and that it was obviously not "real" queso. Mind you, they promptly gave me a wheel of queso fresco, so I didn�t complain!!!
