any ideas where i can purchase brava sauce online? can not get enough of the stuff on my trips! or a link to a good recipe. saw some pre-packaged in a grocery store in madrid?? should have stocked up when i had the chance.

I can't find any place to buy Brava Sauce on line for you but making it is like falling off a log:
Combine one cup of tomate sauce (not ketchup) with 4 Tbsps mayonaisse, 1 clove of minced garlic, 1 Tbsp vinegar, 1 tsp spicy paprika, 1/2 tsp ground cumin, and chili pepper or cayenne to make it as hot as you like. (you can use Tabasco).
To make the potatoes, peel (or not) and cut them in nice chunks. Parboil them starting in cold water so they are soft on the inside. Then drain, dry and deep fry until golden and crispy.
Boy, is that the best thing you ever had with beer or not???????????
Thanks for the recipe Richard, it is my fave tapas, I tried to make it at home but it did not turn out the same as the Spanish style. Will have another go now, and wash it down with a few beers. Thanks again.

thanks richard, ill give it a try today. sure sounds like i remember!!!!! there is nothing better than potatas brava and a cold beer, especially in madrid after walking for hours! ill let you know how it turns out.

Ok you guys. What a nice reaction to patatas a la brava!!! I went out and had some because you got my mouth watering and I was able to pry the recipe out of the barman at a little tasca near my house. Much simpler than the recipe I use and passed on. So Mad-Sue from Manchester, maybe that's why it did not taste like what you have had here:
Simple Brava sauce recipe 1 cup of tomate sauce 1 tsp. Tabasco sauce (or to taste) 1 tsp vinegar Olive oil Salt
Richard, thanks again for another recipe, I will try both and let you know which tastes the best. Personally, I have found that different bars use different sauces, obviously everyone has their own "secret" ingredients. The best I ever tasted was in Zaragoza which was mainly mayo with a spicy flavour(Garlic?) and tabasco drizzled over the top. Mmmmmm delicious! Now my mouth is watering! Sue.

Sue - that sounds like the all i oli we had in Valencia on our patatas bravas. You crush some garlic in a 'mortero', add an egg yolk and continue to move the pestle the same direction as you very slowly add olive oil. If you're a garlic lover, it's wonderful!

Hi to all, Well tried both of Richard's recipes and have to say the one with the mayo was good. Did not use the hot spices but tabasco and it was wonderful. How about a few more simple recipes Richard?

I just read most of the posts (oops) and thought about something my wife and I love. It's called Roasted Raspberry Chipotle Sauce. (Chipotle is a type of pepper)It is a southwestern mesquite barbeque sauce that can be used with pork, chicken, or even fish. It is made by Fisher and Wieser in Texas. There are 4 of them right in the center of Madrid around PUERTA DEL SOL
1) "Calle Cruz #15" (the one I go to and seen in THIS PHOTO). 2) "Calle Espoz y Mina #13". 3) "Calle Alvarez Gato #3" (Specialized in "pulpo" = "octopus") 4) "Pasaje Matheu #5 (Indoor and outdoor dining).
Highly recommended by myself for Bravas, Calamar, Octopus etc...

Hi Jer, I was just thinking about the place over by Piramides that serves just Patatas on an "artist's palette" and serves them with about 10 different salsas. Is this Las Bravas too? we always go there, and my husband isn't home right now to give me the name of the place. Anyway, at our friends Spanish restaurant here in CA, he uses the Asian hot sauce, which is made with vinegar and has a reddish color, (hoison sauce?) and mayo, it is dynomite!!

Actually, I do not know that place by Piramides but I am sure it is not a "Las Bravas" since their places are all listed in my post above and are all in the center of the city around the Puerta del Sol.
