hey guys! i'm a hotel and restaurant institutional management student from the philippines and we're having a function with a spanish theme. i'm having a hard time looking for great spanish recipes because there are a lot! so if someone could help me pick out some unusual cuisines besides paella, cocido, tapas and the like, i would greatly appreciate them. we would like a fun and festive spanish theme, not at all formal, something casual that 20+ people will enjoy. our menu list includes soup, salad, main dish, dessert and drink. any recipe of any of these that you put would be great. THANKS!

This may well sound totally boring but my favorite dessert is that ubiquitous FLAN !
(Yes the good old creme caramel type brulee.!)
An egg custard baked in its own caramel sauce.

I have tasted many FLANS so far in Spain and some of them are absolutely outstanding. Others are just - well - insipid and factory produced.
I think it would be easy for you to make FLAN but it will need some inspired tender loving care. And plenty of research.

Well, specially for summer time you could make a gazpacho, it's a cold soup or a drink as you prefer with tomato, cucumber, garlic, bread, olive oil, vinegar and salt. I usually have a jar on my fridge. A salad specially nice for summer is the pipirrana, it's made with cock, tomato and black olives and of course salt and olive oil. Other salad is the escalibada (or escalivada), it's done with roast vegetables.
I cannot think of a main dish easy to do and carry for a party like that but the tortilla de patatas.
For dessert I specially like peras al vino with natillas.

haha, Miguelito, :jeje: I also make pipirrana with other "fish?": tuna and also with boiled egg. But for the summer: Gazpacho rules!

Hola Ariane,

You might try some of my favorite dishes from Spain.

First from Catalonia a Tortilla de Esp�rragos This is an Asparragus omelet, served with Champi�ones al Ajillo fried mushrooms with garlic from Pais Vasco. Or make some Patatas Bravas Fierce/Angry Potaoes from Madrid. I could eat two rations at a time! :b:

For bread do try the Catalonian Pa amb Tom�quetalso known as pan de tomate by some, griled bread with tomato and olive oil and garlic.

For a salad I would recommend the Ensalada Andaluza green salad, serrano ham and tomatoes.

You might try a Caldo Gallego, or a Fabada Asturiana, or a most delicious fish dish Bacalao a la Vizcaina. These three represent the regions of Galicia, Asturias and Pais Vasco respectively.

From Catalonia there is the Zarzuela de Mariscos, it is a lighthearted treat of the fruit of the sea! From Castilla there is the Pisto Manchego

For dessert, like Nige, I love flan and it goes well with any type of cuisine. But you may also make Crema Catalana, Leche Frita, Tocino del Cielo, Brazo Gitano Roll Eyes

Then end the meal with a cheese sampler, I don't recommend Cabrales and a nice Sherry.
