Yesterday I tried Carmen's recipe and made rice (no paella)with beer instead of water. I agree with her. The rice tastes a lot better! Next time I'll try it in the paella. :cheers: Carmen!

Yesterday my brother in law who just came back from a holiday in Spain made a paella for the whole family (while he was still in Spanish mood). When the paella was ready, he covered the pan with a newspaper. He told us he learned this fom a Spanish cook. Apparently it has to be a newspaper, no aluminiumfoil or whatever. What do you experts think?

I�ve heard that covering the paellera (pan) with a piece of cloth is the way to do it. Besides, you don�t take the risk of eating some ink from the news
