While in Sevilla, at Las Brujas(a dinner and Flamenco bar) we had Salmorejo.
We cannot find the recipe anywhere. Outside of Andalucia, few people have heard of it.
Maybe someone on this board, can help find it.

First, go to Cordoba and have salmorejo with berenjenas fritas at Taberna Juan Pe�a and get an idea of a truly great salmorejo, then get a good recipe from one of Penelope Casas's books or from "My Kitchen in Spain," a new book by Janet Mendel (a Mijas resident for more than 30 years). It is hard to find anything better than a salmorejo cordob�s.

Thanks for the tips, we are in the process of trying different versions of the recipes,although the bread is different here(we have found a Portugese bakery) and that helps a lot.
