Exactly Laidback!! I am now calling my tortillas, tortilla Canaria, this is a madsue speciality with cold runny uncooked egg in the middle and a nice and crispy outside!!! I also make it with precooked chips (french fries  ) or even leftover Burger King fries  . My dog loves them too!!!! :jeje: Served with enough of this :cheers: they go down a treat! (Except with my son!)

Well, I can think of a few aditional pointers....: -About the egg not setting�?('cuajar'), I can tell you in my case, that's never ever happened, maybe because I add the potatoes to the bowl with the beaten eggs pretty much directly from the frying pan, therefore they are so hot that the egg starts to set even as I'm mixing it up with the potatoes, and by the time it all goes back to the pan, the consistency is "pasty" never "runny". -I recently discovered a much simpler way to get perfect "flip offs" for my tortillas. I used to use a plate to turn the tortillas as I've always seen my grandmas and mum do, but now I simply use two similar sized frying pans, so I keep turning them and "flipping away" until I'm satisfied with the "browness" of both sides!.... -Rebrites, your tortilla sounds pretty exotic to me.  In case anybody is wondering what my tortillas for the Q were like, there were two regular ones (with onion of course!), and two 'camperas'; meaning that, along with the oil, eggs, potatoes and onion I "threw in" some peas, French beans, some diced chorizo and 'jam�n Serrano'. (obviously, add an extra egg if you want to go this route) -About the eggs-potatoes ratio....it depends so much on the size of the potatoes!, (and even the size of the eggs ![[Embarassed]](redface.gif) ), but 2 medium potatoes per 3 medium-sized eggs (and about a quarter of an onion) is what works best for me.

I just wanted to thank everyone for their suggestions on the egg/potato ratio. I made a tortilla this weekend and, lo and behold, it cooked all the way through. I think I was using more egg than was necessary. Now I just have to practice lots and lots to get it down perfectly. Anne

In the US, as in Texas, everything is BIGGER. My 1 egg: 1 potato ratio presumes the potato is about twice the size of the large brown egg. I think this is one of those issues each cook must work out for himself, sorta like souls and Salvation. Tastes vary, consistency varies. We all go to heaven at the end!
As for making "exotic" tortilla...mine has fewer ingredients than your serrano and chorizo, beans and peas! ... I believe the tortilla may have evolved from the old "dump" recipe, where the cook simply empties whatever leftover staples are in the fridge into the pan at some point. In my hikes around the country, I've had tortilla with Fava beans in it, tuna, olives, ham, tomato, spinach, and/or tiny prawns -- and have eaten tortilla served with sherry, mayo, beer, hot sauce, salsa verde, tempranillo, even in a "tortilla bocadillo." Somehow it never gets tiresome, and it feeds millions so cheaply. I believe it may figure into World Peace someday.

Wow, you people are making me hungry. For a change I make a tuna tortilla, which is delicious, I make a regular tortilla and add albacore tuna and it is fantastic! Yummmm I love your tiny little dog, Paul, it is adorable, but I would be always afraid I would step on it and kill it! Madsue, :cheers: for another inventive recipe!

The Rat Dog does a marvelous job of staying out of one's way, but I can't say that for our cat. I have a book with quite a few tortilla recipes, maybe I can post some here.

A little bit of digresion -i.e. off-topic comment- with Jer's permission: I think maybe Paul's Rat Dog should be multimadrid's mascota official. It looks so cool in the picture next to the tortilla  . Just another suggestion, Paul: You could dress it up as a Flamenco dancer con traje de faralay, de lunares, y todo, and take another pic of it. Ser�a la ca�a!

Excellent idea Sensis!!! I think the little oil stain is a cutie and would make a fantastic mm mascot. It's not exactly an "Oso con el madro�o" but I don't know of any mm members who have one of those as a pet. And someone would need to make a new little black graemlin with bat/rat ears. If we want to be very diplomatic we could start a new thread and let peope vote on what (or who  ) should be the mm mascot. Back to topic: I can't cook further than a can opener but I love to sample tortillas so if anybody wants to practice I'll be happy to act as your guinea pig. Lena
