Had an excellent paella, reasonably priced, at the restaurant "Tres Encinos" (spelling?) near Plz Callao. Was down a street running behind Hotel Capital toward Oskar's (which itself represents another type of dining experience). Interesting place...has fish, langostinos, pulpo, calamari, etc. laid out on ice in the front window, but is really very nice inside....the sort of place where they seat you more or less depending upon how you're dressed....I ended up behind the fish. Gala is a big name in Madrid as fas as Paella is concerned. But please remember two things: Wine-matches for Paella?---> Cava or Chardonnay Gala has two different times either at lunch or dinner you can sit in. This is the only way they can deliver fresh Paella. Andr�s
