Hi Dean, I was once a chef, long time ago now though, and I think that, as you are looking to improve your already existing cooking skills, it would be better if you enroll on to some refresher classes in Madrid, in order to top up your existing knowledge, and of course to pick up on some new things that you might not have learned before. This is a topic which has been discussed at length on here before, by our many resident ''cooks'' and I thoroughly recommend going through those threads, in order to help you to decide which course(s) you might go for. but what are you asking? for a chef to give you lessons? why don't you just take cooking lessons at an established school such as this one listed in my book... If your Spanish is up to par, you can try a cooking class at Alambique (Pl. Encarnación, 2, <metro>Ópera, tel. 91/547-4220, www.alambique.com). One of the city's first gourmet kitchen outlets, this shop also offers short and long cooking courses on everything from making gazpacho to frying fish Andalusian-style. Go to the web site and click cursos to see what’s cooking. Also check the thread on "American Restaurants" my first reply was about three restaurants owned by American Chefs. maybe they would offer classes in the slow summer season. please post back with what you find out candela |

Spain's Escuelas de Hosteleria have a very good reputation! In this area they are private schools funded entirely by some European initiative (otherwise tuition would be aprox. 600 euros /year). I myself was thinking of taking one of these courses (too bad you can't mix cooking and bar together). In Cádiz you choose either Retaurant and Bar, or Cooking and Pasteleria. The courses are two years long and give you a recognized diploma. Despite the fact that the course is free, unfortuantely I can't afford not working for 2 years, otherwise I could become the next great Canadian chef in Spain.  Just thought I would give you that option too, deano! Oh, and if I lived in Madrid I think I would spend all my free time at Alambique.  |
